I have been having a disturbing trend. I seem complete incapable of healthily dealing with stress. Not only does it usually trigger my depression, but I've also been having stress induced aphasia. It's very frustrating too, because even I think I must be faking, but I can't stop. Then, like a switch, it just ends and I can speak complete sentences again with no issues.

I don't know if I should seek out a therapist again (my previous encounters ~8-12 years ago were not terribly fruitful.)

Mostly I can ignore the problem because my life is mostly unstressful, but I feel like stress is an inevitable part of life, so I'd like to help the issue if I can.

Honestly, I might seek out a neurologist about the aphasia...

Can they diagnose anything when it only happens when I'm ubber stressed? Most doctors I've found are like car mechanics. If it's not making the funny noise when you bring it into the shop, they can't do anything... but then most doctors tend to just guess with me even if there is something wrong.

PROBABLY not, but it's something I'd still want to talk to someone about, and perhaps end up with some baseline tracking in case it gets worse.

Seconded from me.

I don't know about neurologist w/ aphasia, but sometimes a doctor can work from a video or recording of the symptom in action. Even if it just looks "sure, it's a recording of what I'm describing", sometimes that carries clues about what's going on that a specialist can pick up.

Quite possibly both neurologist and therapist. Avoiding stress entirely isn't viable; getting professional help -- and being picky about it -- may be.
