Black knot fungus

Our trees have black knot fungus. we had a tree guy come. "nothing can be done, you can't spray or anything. It will kill all these trees." "will it spread to the big ones?" "no, it attacks only pitted fruit trees."

This is actually reasonable news. Pity it can't be treated, but as long as the big ones are safe, that's fine.

That is sad. Does this mean no stone fruits there ever, or will the fungus die off eventually (... after the trees do)?

Some things can survive dormant in the soil for a long time (years, decades, ...). Very casual perusal of the 'net suggests that black knot is at least not infamous for that.
