That sounds delicious.
Does sorbet hit the spot, or are you craving the creamy texture? Is the no-dairy allergy or dietary?
Don't go overboard on the blender; we have a cheap highly rated one from Amazon (similar to this

) and it completely meets our needs. I don't understand why a blender (or dishwasher, etc.) needs 10 settings.
OTOH, you may want to consider a stick blender. I found that most of them are cheaply made and break, and it's worth spending a bit more. After going through three we finally found this one:
